I used to think I hated brussel sprouts. I mean, who really lists them as their favorite food? I had them in a restaurant a few years back and was blown away by how flavorful they were. I started experimenting on my own. At first, success! I found a recipe that worked.

But as I veered away from the one recipe I realized, my sprouts started to suck. They were almost inedible. Hard, bitter, just yuck. What did I do wrong?

I realized it as soon as I looked back over the first recipe. You have to boil the sprouts first. That’s enough to cook them through and make sure they’re nice, soft, and ready for whatever seasoning you’re putting on them.

And don’t worry, boiling the sprouts is easy. Just cut off the bottom bit, pour into boil water on the stove and stir ever so often for 5 minutes. The sprouts will turn bright green and you’ll be able to enjoy them soon!

Last time I made sprouts the recipe called for putting them in the oven for 18-23 minutes without boiling first. I know that was going to be a mistake. That’s not nearly enough time to cook them through. So I boiled them, followed all the other instructions as written, and they came out so delicious everyone had seconds. Which includes Dan, who thought he didn’t even like sprouts.
